Okay, now I feel bad. I feed my pet gecko worms, but don’t worry. She also eats apricots and bananas, and the crickets I give her are on a steady diet of fresh broccoli.

Eating to Live on the Outside: Jhanjay Vegetarian Thai Cuisine

Quick! I need to catch a plane. This week Eating to Live on the Outside heads to Seattle to check out Jhanjay Vegetarian Thai Cuisine. It looks pretty good, but not perfect.

Jhanjay’s menu is loaded with vegetables, no doubt about that, but a lot of the food is stir-fried, which is a problem. So, with that in mind, here’s a quick list of things I might order:

Vegetarian Rolls

  • Fresh mint, green leaves, carrots, cucumbers, rice noodles, tofu, wrapped in rice paper and served with homemade sauce; the noodles and rice paper make it iffy.

House Salad

  • Romaine lettuce, tomatoes, cucumbers, carrots, red cabbage and house dressing; looks cool, but dressing on the side.

Papaya Salad

  • Shaved green papaya, carrots, tomatoes, green beans and peanuts tossed with lime juice; I order this everywhere I go!

Larb Tofu

  • Chopped tofu, mushrooms, red onions, mint, chili, lime juice, cabbage and toasted rice powder; I’d ditch the rice powder.

Mango Salad

  • Sliced green mango, apple, carrots, roasted peanuts, fresh herbs and tamarind sauce; I like this too!

Sweet and Sour

  • Onions, bell peppers, carrots, cucumbers, tomatoes and pineapple stir-fried with sweet and sour sauce; lots of veggies, but the stir-frying stinks.

Broccoli Lover’s

  • Garlic, broccoli, onions, carrots and mushrooms stir-fried oyster sauce; same deal with the stir-frying.

Swimming Rama

  • Stir-fried spinach, bean sprouts and garlic topped with peanut sauce; love that spinach.

Abundant Asparagus

  • Mushroom cake, asparagus and shitake mushrooms stir-fried in garlic sauce; I have no idea what mushroom cake is, but asparagus rocks!

Mountains of Mushrooms

  • Portobello, enoki, ceps and shitake mushrooms stir-fried in special light garlic sauce; I do like mushrooms.

Jhanjay does serve up a lot of vegetables, but if I had to pick, I’m staying away from the stir-fries and going with the house salad or the papaya salad. Odds are it’d be the papaya. It’s too hard to pass up.

Oinker Flu Could Return in the Fall!

During a news conference this Tuesday the U.S. Centers for Disease Control and Prevention warned that influenza outbreaks usually come in waves and, like the 1918 Spanish flu pandemic, swine flu might be much worse this fall. Currently, officials estimate there have been 7,927 confirmed and probable cases of swine flu in the United States, with 11 deaths, but all victims had underlying health problems prior to being infected; HealthDay News reports.

Kind of a big jump, only a couple weeks ago the number was 4,700 cases, but many experts suspect it could be a lot higher, as high as 100,000, since not all cases are severe. A little scary because most Americans aren’t healthy and today’s flu vaccines are pretty much worthless.

And last year, a report by the World Health Organization and the CDC determined 25% of flu viruses in Europe and 11% of flu viruses in the United States are resistant to antiviral drugs.

Not Many Junk Food Commercials Banned

In 2007, countries like Canada and the U.K. banned junk food commercials during kids’ television. It seemed like a good idea, but now a new study in the journal Archives of Disease in Childhood reveals many commercials aren’t actually getting the ban. Researchers analyzed 2,315 adverts from Canada and 1,365 from the U.K., 52% to 61% were for unhealthy food, with 5% to 11% likely to be seen by children, but only 5% of the ads would be prohibited under the ban; via EurekAlert!

Even 5% can’t hurt, because previous research has shown most commercials during kids’ programming are for junk food, with American children being exposed to food of poor nutritional quality, like Honey Smacks cereal, which have as much sugar as a glazed doughnut.

In related news, a recent study found advertisements for unhealthy snack foods, like chocolate bars and ice cream, often appear right next to health articles in health magazines!

Angioplasty and Stent Placement is Worthless

In the most recent study, investigators reviewed 61 trials, involving 25,388 patients, in a meta-analysis comparing angioplasty and stent placement with no treatment or medications alone. A meta-analysis pools numerous studies on the same subject. The findings indicated that there was no evidence that angioplasty and stent placement for coronary artery disease resulted in fewer heart attacks or deaths when compared to patients with the same level of disease who were not treated in this manner.

Interventional cardiology and cardiovascular surgery is basically a scam based on a misunderstanding of the nature of heart disease. Searching for and treating obstructive plaque does not address the areas of the coronary vascular tree most likely to rupture and cause heart attacks. If there was never another CABG or angioplasty performed or stent placed, patients with heart disease would be better off. Doctors would be forced to educate our citizens that their heart disease risk is determined by what they place on their forks. Millions of lives would be dramatically extended. To abandon the theory of stretching and cutting out areas with plaque would shut down interventional cardiology, nearly all cardiovascular surgery, and many suppliers of the biotechnology. In many cases, interventional cardiology is the major income generator to hospitals. The ending of this ill-conceived, out-dated and ineffective technology would dramatically downsize hospitals in the United States and free up over $100 billion annually in medical care costs. Besides being ineffective, interventional cardiology places the responsibility in the hands of the doctor and not the patients. When patients finally realize they must take control of their heart problems with aggressive dietary modifications (and when needed medications for temporary periods) we will essentially solve the health crisis in America.

The sad thing is surgical interventions and medications are the foundation of modern cardiology and both are relatively ineffective compared to nutritional excellence. My patients routinely reverse their heart disease, and no longer have vulnerable plaque or high blood pressure, so they do not need medical care, hospitals or cardiologists anymore. The problem is that in the real world cardiac patients are not even informed that heart disease is predictably reversed with nutritional excellence. They are not given the opportunity to choose and just corralled into these surgical interventions.

Trying to figure out how to pay for ineffective and expensive medicine by politicians will never be a real solution. People need to know they do not have to have heart disease to begin with, and if they get it, aggressive nutrition is the most life-saving intervention. And it is free.

Representative Case Studies

The interesting part of the results achieved with excellent nutrition is that lots of these individuals were already on “healthy diets” and getting worse, before following my nutritional protocols to reverse heart disease. Some were even worsening on vegetarian diets. The other notable achievement is they do not get a small amount of reversal of atherosclerosis, they get a dramatic amount of reversal:

  • Case 1: 60 year old male, with chest pain. Height 5’ 8” weight 158. This 60 year old male had read “Fit For Life” over 10 years ago and was following a healthy “starch-based Mediterranean-type diet.” He ate mostly vegetarian foods with brown rice, potato and whole wheat, fruits and vegetables, chicken only a few times a month, fish once or twice a week and some olive oil on salads. He began an exercise program in June of 2006 and surprisingly found he had chest pain with exertion. His weight was stable at 158 for years. A stress thallium test indicated a significant coronary artery disease with an LDL cholesterol of 126. And Lipo (a) of 202. His CT angiogram done on 6/30/06 showed near total obstructive disease in the proximal LAD (left anterior descending artery) due to low density plaque. He began my careful dietary protocol for the reversal of heart disease and did not have angioplasty or bypass as was suggested by the cardiologists. After following my nutritional advice for one month the chest pains resolved and his weight dropped to 140 in the first 8 weeks (loss of 18 pounds). One year later a repeat of the CT angiogram showed the LAD with a non-obstructive mixed density plaque with a stenosis estimated at 50 – 70 percent estimated. His weight has remained around 138 – 140 since following my dietary suggestions. In August of 2008 the last evaluation of his coronary arteries was performed showing normal cardiac blood flow and no evidence of heart disease.
  • Case 2: 44 year old male weight 240 height 5’ 9” high cholesterol. Carotid artery 60 -80 percent as measured by carotid ultrasound. First year after reading Eat To Live and then following the high nutrient protocol he lost 80 pounds. His repeat carotid ultrasound in one year showed no visible plaque.
  • Case 3: Middle age male on the strict version of the Pritikin program for over 3 years while his carotid artery disease as measured by ultrasound, continued to worsen. "After a year on Pritikin, the results were same or very slight improvement. I went on very strict Pritikin for 2 years, to improve it. After 2 years on very strict Pritikin, significantly worse! The radiologist said "The lesion on the left side is stable, there is some early buildup on the right side. I got a nice picture of a lipid (fat) inclusion in the artery wall. I was recommended to Dr. Fuhrman by Jeff Novick, at the Pritikin Center. After 20 months of Fuhrman program, great results. Thinner artery walls. Radiologist comments: "Borderline evidence for evidence of atherosclerotic burden" No longer talking about a lesion or early buildup!! Barely any sign of atherosclerosis. In the 20 months, following my dietary protocol this person, Lost 10 pounds, to pinch 1/2 inch to 6'0" 157 pounds. Last 5 months no snacking, eating 3-4 oz seeds and nuts daily. Ran 2 miles/day, whereas he was running 4 miles/day during the last 2 unsuccessful years on Pritkin. Pritikin was different in that I was living on lots of whole grains, and ate 6+ meals. Much less high nutrient food.
  • Case 4: 66 year old male with a history of Wolfe Parkinson White Syndrome, which was responsible for his sensitivity to develop a rapid heartbeat with the ingestion of caffeine, alcohol and sometimes even heavy exercise. He changed his diet first to vegetarian and then to low fat vegan. After a little more than one year on the very low fat vegan diet his irregular heart beat (arrthymias) worsened and he then developed atrial fibrillation. In June of 2008 he changed his diet to my nutritional recommendation, high micronutrient intake, strict salt avoidance, but not low fat, with the liberal use of nuts and especially seeds and within three months his cardiac arrhythmias completely disappeared. Since then he has religiously kept to this program with no further heart evidence of atrial fibrillation.

Lack of Vitamin D Makes You Demented!

A new study in the Journal of Alzheimer's Disease claims low blood levels of vitamin D may heighten the risk of Alzheimer’s disease and dementia. Scientists point out numerous studies have linked vitamin D deficiency with conditions such as heart disease, diabetes, osteoporosis, depression and gum disease, and that all of these have been associated with increased risk of dementia. Red Bull All Coked Up...

Red Bull might give you wings, but apparently it might also give you the frantic energy you need to build a barn at 2 o’clock in the morning. German authorities report finding trace of amounts of cocaine in Red Bull energy drinks. As a result, Red Bull is now banned in Germany. Official testing revealed 0.4 micrograms of booger sugar per liter of the drink. Experts say the dose was too small to do harm and Red Bulls insists the drink is harmless; the Associated Press reports.

Energy drinks are hardly harmless. They are high in caffeine and caffeine is a stimulant, which allows you to get by with less sleep, but lack of sleep promotes disease and premature aging. And recently, coffee was linked to shrinking breasts and even hallucinations. Eek!

Last year, an Australian study determined drinking Red Bull, as little as one can, can increase your risk of stroke. Even still, Red Bull managed to sell 3.5 billion cans in 143 countries in 2008.

Sports stars are our heroes, whether they score the game winning goal or the walk-off homerun. We admire them. They inspire us. Private First Class Nick Madaras was a star. Killed by a roadside bomb in Iraq, his spirit lives on in a bunch of old soccer balls:



So far, Kick for Nick, the organization created in his honor, has collected over 1,500 balls and they all bare the mark “PFC Nick Madaras” so that everyone remembers Nick’s sacrifice and his passion for soccer. Very touching, hopefully it inspires you too.

Heart Disease Starts Before a Heart Attack

New findings in the International Journal of Clinical Practice reveal the symptoms of cardiovascular disease prior to a heart attack go largely undiagnosed. Of the 1,573 heart patients surveyed, over 50% claimed their ailment was not identified until they started showing symptoms, such as chest pain and shortness of breath or an actual heart attack, with 22% saying they were diagnosed while being treated for something else; via Booster Shots.

Listen, heart disease doesn’t just happen. In fact, in Dr. Fuhrman’s book Disease-Proof Your Child, he explains precursors to cardiovascular, like high cholesterol, start in childhood and lead to heart disease in adulthood, but the problem is, young people don’t take heart health seriously.

In related news, a recent report found people with poor cardiovascular fitness have a 56% higher risk of heart attack and eating red meat is linked to a 27% higher risk of heart disease.

Q & A: Pregnancy, Gaining Weight and Exercising

To me, as a single guy, pregnancy means sweaty palms, shortness of breath and an anxiety attack, but to women, it’s apparently a big deal. Who knew! Now, we all know women care about their figures, but should pregnant women lose weight and exercise? Here’s a quick discussion about pregnancy from Dr. Fuhrman’s member center:

Question: I am 45 years old and just found out I am pregnant. I recently gained seven pounds and was gradually losing it before I knew I was pregnant. Should I try to avoid losing the last few pounds and just keep my weight stable?

And are there restrictions on exercise or lifting. I currently do about 15 to 20 minutes strength training and about 20 to 30 minutes riding a bike and I frequently lift heavy boxes and my four year old.

Dr. Fuhrman: Even if you aren’t pregnant, if you don't overeat and only eat when you’re really hungry, your weight will drop to the healthiest weight for you. And if you are pregnant and you eat healthfully, don't overeat and only eat when you are hungry. Your weight will rise to the healthiest weight for the two of you.

In regard to exercise, whatever activity you are presently accustomed to, you can continue, until the sixth month. Then start to decrease gradually over the last few months, being careful not to strain yourself.

Superior Diet and No More Skin Rashes

When you get healthy, good things happen. Sometimes it’s obvious. Scott lost 250 pounds. You’ll notice that! But for Jodi it was different. She had chronic skin rashes all over her back, until she improved her diet and starting living better:

Last Anchovies on Earth!

In future, the world will be a very different place. Aside from mechanized bending robots and a purple-haired Cyclops, anchovies will be extinct. And while some will offer millions for the last remaining can on earth. One humanoid from the past will put them on pizza:



Actually, anchovies—not the ones in the can—are a very low-contamination fish. I was surprised to see that. Now, no one is saying to put them on pizza, but the Environmental Defense Fund calls anchovies an Eco-Best. Go figure!

Eating to Live on the Outside: The Green Bean

Wow! I’m tired. I blog a lot! So by the end of the week I’m pooped, but before I chill out. Time to take a “trip” to The Green Bean in my favorite stomping ground New York City. It’s an organic vegetarian restaurant, which makes it a surefire winner for Eating to Live on the Outside, right?

Yup, it looks really good. I see kale, tomatoes, lettuce, mushrooms, beans, peppers and all sorts of great stuff. But before I make my final decisions, here’s a rough draft of food I might order:

Hot Organic Oatmeal

  • Oatmeal, apple sauce, cinnamon, raisins and cranberries; sounds good, along with chocolate and sushi, oatmeal is a vice of mine.

Texas Style Veggie Burger

  • Grilled soy patty, soy cheddar cheese, tomato, onion, Romaine lettuce, soy mayo, Dijon mustard, pickles, barbecue sauce, salt and pepper served on a seven-grain bun; its okay, but I’d ditch the fake cheese and mayo and the salt.

California Tofu Wrap

  • Tofu or soy cheddar, avocado, onion, tomato, Romaine lettuce and soy mayo in a whole-wheat tortilla; I’d go with the tofu and pass on the faux cheddar and mayonnaise.

Couscous with Veggies and Tofu

  • Organic whole-wheat couscous, grilled vegetables and tofu; sounds pretty cool to me.

Three Layer Casserole

  • Organic sweet potatoes, black beans, millet and mushrooms, served with steamed kale; got to love that kale!

Organic Tofu Brazilian Stew

  • Potatoes, sweet potatoes, celery, onions, mushrooms, tomato, carrots, olive oil, bay leaf, parsley, garlic, fresh herbs and served with brown rice; looks good, I’m okay with the rice and oil.

Green Bean Garden Salad

  • Field greens, tofu, cucumber, peppers, zucchini, tomato, sweet potato and garlic ginger dressing; lots of greens, you can’t go wrong, but dressing on the side just to be safe.

Garden Grill

  • Grilled eggplant, zucchini, yellow squash, roasted peppers, olive oil, pesto on seven grain bread; you might be leery about the grilling, but I mostly eat steamed food, so I can deal with it.

Italian Mob

  • Roasted organic peppers, mozzarella soy cheese, basil and sun-dried tomatoes served on seven grain bread; pass on the cheese.

California Grill

  • Roasted red peppers, eggplant, zucchini, onions and goat cheese on seven grain bread; I’d skip the cheese and no worries about the bread.

Yeah, The Green Bean is really cool, especially since a lot of the food is organic. Hard to beat that! But if I really had to pick something, I’m going with the Three Layer Casserole or the Green Bean Garden Salad. Both look good and satisfy my green veggie requirement.

Higher Suicide Risk in Overweight Teens

New findings in the Journal of Adolescent Health reveal teenagers who are overweight or perceive themselves as fat—even if they aren’t—are more likely to attempt suicide. The study involved 14,000 high school students and determined teens who think they’re overweight are more likely to attempt suicide than kids who do not, leading experts to recommend that youth health campaigns also include teenagers with distorted body images; ScienceDaily reports.

Teens have it rough! A previous study showed teenagers carrying around excess belly fat have a greater risk of developing heart problems and stressed out kids have increased blood levels of C-reactive protein, leading to inflammation and cardiovascular disease later in life.

In related news, a report showed people living in areas with extended periods of sunlight, such as Greenland, were at greater risk of suicide during seasons of continuous day.

What Vegans May Be Missing...

Certainly a plant-based diet which minimizes animal products is the best approach for losing weight, preventing and reversing disease, and optimizing health. However, those following a vegetarian or vegan diet, and those not consuming fatty fish like salmon each week, should be aware of recent studies that suggest they may be deficient in a critical and essential nutrient, especially EPA & DHA, the long-chain omega-3 fatty acids.

Alpha-linolenic acid (ALA) is an omega-3 fat and is the precursor of the longer chain omega 3 fats eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA). EPA and to a lesser extent DHA can be made in the body from ALA. Primary sources of these fatty acids are certain fish and seafood.

As a result, vegetarian, and especially vegan, diets provide little EPA and DHA directly. A recent study reviewed the varying dietary fat intake across vegetarians, vegans, omnivores, and semi omnivores and its impact on essential omega-3 fatty acid availability in tissues. It concluded that vegetarians were left with reduced levels of omega-3 and recommended that they consume additional direct sources of EPA and DHA, regardless of age or gender, for physical, mental and neurological health benefits.1

In addition, ALA, EPA, and DHA are especially important for the prevention of certain cancers, particularly those of the breast and colon, and possibly of the uterus and the skin, and are likely to reduce the risk of postpartum depression, manic-depressive psychosis, dementias, Parkinson's, hypertension, toxemia, diabetes, and to a certain extent, age-related macular degeneration.2

Although vegetarian diets are generally lower in total fat, saturated fat, and cholesterol than are non-vegetarian diets and may appear to offer cardiovascular health benefits due to higher intakes of antioxidants and fiber, the lack of direct EPA or DHA dietary sources may cause an adverse effect.3,4

With all of this documented research, it is not surprising that when I draw blood for fatty acid analysis on many of my patients, I find that a large percentage of individuals who do not eat fish or seafood regularly do not have optimal levels of DHA, even those eating walnuts and flaxseeds on a regular basis. I often see patients eating otherwise excellent diets with itchy dry skin, seborrheac dermatitis and other signs of DHA deficiency.

Although, there are some vegans and vegetarians regularly consuming walnuts and flaxseeds (which supply adequate ALA) may produce enough DHA on their own and may not require supplementation. However, because this issue is so imperative to their health it should be confirmed with a blood test before assuming that the conversion level is adequate. In order to assure optimal production of DHA fat, without recommending that the consumption of fish or refined fish oils, I recommend taking a vegetable sourced DHA supplement. DHA alone can deliver the same benefits of fish oil, since the intake of DHA can cause a natural retro-conversion to EPA internally.

Laboratory cultivated DHA is made from microalgae and is a pure form of DHA without environmental contamination. It is grown in the laboratory, not collected in the wild. It has no mercury or other toxins, which is a concern even for non-vegans who are cautious about eating fish or seafood.

DHA has been shown to protect against dementia, depression, inflammatory diseases, attention deficit and hyperactivity disorder (ADHD), allergies, and to offer significant benefits for overall cardiovascular health.

There are other problems with consuming fish oils. The main problem is that the fat turns rancid as it sits on store shelves. As a result, many people complain of burping, indigestion, a foul taste, and long lasting fish-breath. I have also observed that rancidity of this fish fat can place a stress on the liver. Patients of mine have had blood tests showing abnormal liver function when consuming fish oil in significant amounts and then have had these tests return to normal when the fish oils were stopped.

Fortunately, vegetable derived DHA, from microalgae, is an alternative. However, even algae derived DHA can become rancid if not cared for properly. Chewing Almonds May Suppress Hunger

New findings in American Journal of Clinical Nutrition claim chewing almonds increases the absorption of unsaturated fat and reduces hunger. For the study, 13 participants, average age of 24, chewed 55 grams of almonds 10, 25 or 40 times and were monitored over the next four days.
Results showed masticating almonds 40 times suppressed hunger the most and levels of an appetite-stifling hormone were the highest among the 40-chew group; Nutra Ingredients reports.

Nuts are great! Previous reports show eating nuts prevents metabolic syndrome and pistachios help lower LDL, or bad, cholesterol. In the March 2007 edition of Dr. Fuhrman's Healthy Times newsletter, he explains nuts contain nutrients and antioxidants that protect against heart disease.

Now, this is nutty. Last year, German police warned thieves NOT to eat the 660 pounds of hazelnuts they stole. The nuts were treated with hydrogen phosphate gas, making them toxic!

Inspiration: Major Phil Packer, Marathon Runner

British soldier Major Phil Packer suffered a catastrophic injury to his spine after a rocket on his base in Basra, Iraq last year, losing all feeling and motor control in his legs. Doctors said he’d never walk again, but that didn’t stop Major Phil from completing the London Marathon:



Phil walked two miles each day—the most his doctor would allow—he finished in 13 days and did at all for charity. There’s no quit in the Major. In February, he rowed the English Channel and next month he’ll climb a 3,000-foot vertical rock formation in California. Go Phil, go!

Cardiovascular Fitness Means Healthier Heart

Go outside and run! Because a new study in the Journal of the American Medical Association shows people with high levels of physical fitness, i.e. cardiorespiratory fitness (CRF), have lower risk of all-cause mortality and heart disease. Experts analyzed data from more than 100,000 individuals, including 84,323 people with coronary heart disease, and findings revealed people with low CRF had a 70% higher risk of all-cause death and a 56% higher risk of heart disease or cardiovascular event than those with high CRF; HealthDay News explains.

You need to exercise! Exercise keeps you fit, builds strong bones and muscles, and more! It goes double for heart health. In March, a study showed exercising after a heart attack helps improve blood flow by 10%, but Canadians didn’t get the message. They don’t exercise enough.

Skipping Sleep May Lead to Weight-Gain

Stop yawning! It’s a bad sign. Discussed at the American Thoracic Society's International Conference, a new study suggests body mass index and sleep share a strong relationship. Scientists analyzed sleep, activity levels and energy expenditure of 14 nurses enrolled in a heart-health program, which included stress management and sleep improvement. Data revealed numerous conclusions, but most notably that insufficient sleep causes or worsens stress, leading to stress eating and weight-gain; via EurekAlert!

Sleep is very important. According to Dr. Fuhrman, sleep allows your body to clean up brain waste, which helps keep your nervous and endocrine systems functioning normally. Your immune system too! Not getting enough sleep makes you more likely to get the sniffles.

And just last week, a report conveyed the grim news that lack of sleep in areas with extended seasons of daylight, like Greenland, increases the number of suicides. Eek!

Over 100,000 Americans Have Swine Flu

Officials confirm there have been 4,700 confirmed cases of swine flu in the United States, but now experts at the Centers for Disease Control and Prevention claim the actual number may have hit 100,000 nationwide. Not all incidences are severe, with many cases appearing to be mild. States hit hardest are Illinois with 638 infections, Wisconsin 613, Texas 506 and California with 504 and deaths have been reported in Arizona, Texas, Washington and now New York; HealthDay News reports.

The swine flu is frightening. While it may not be the big one, Dr. Fuhrman insists a flu epidemic is likely—at some point—because most Americans are unhealthy and flu vaccines don’t work. Instead, a better defense is a healthy-immune system bolstering diet and good hygiene, like hand washing.

In related pig news, Japan insists cloned meat, including swine, is safe to eat. And some scientists suggest pigs may easily transmit deadly bacteria, like Staphylococcus, to humans.

Q & A: Men, Soy Does Not Lower Testosterone

Soy gets a bad rap, people associate it with being a hippie and tree hugging, even though soy is a very healthy food, like edamame beans, but there is this silly notion that eating soy lowers testosterone and is bad for men. Not true. From his member center, Dr. Fuhrman talks about soy and manliness:

Question: My husband and I just started your plan, but recently my mother-in-law said that I was hurting my husband by making him eat more soy. She said that soy is not good for men because it contains phytoestrogens. Is what she is saying true? She cited an article in Men's Health that mentioned lower testosterone and sperm counts.

Dr. Fuhrman: Totally untrue, that is a biased, meat-promoting article written to bash soy. Men's magazines are not the place for reliable information about complicated health issues. If soy did lower testosterone it might be good because the high-meat American diet causes an excess of testosterone, leading to higher prostate cancer risk. Nevertheless this is not true anyway. Scott Loses the Big Shirts and Over 250 Pounds

When you change your life, awesome things can happen. Take Robyn, she slimmed down and kissed her headaches good bye. Or Jacob, he was out of shape and chubby, but today he’s ripped. And check out Scott, he cut 260 pounds and now he’s a bike riding machine:

Citrus Fruits Help Stave Off Vision Loss

Its not just citrus fruits, new findings in the journal Ophthalmology suggest older adults eating a lot of leafy greens, citrus fruits and fish are less likely to develop age-related macular degeneration (AMD), a major contributor to vision lose. Studying the diets of 4,000 adults, experts claim foods rich in omega-3s, vitamin C and E, zinc and antioxidants lower the risk of AMD. These low-sugar foods do not cause surges in blood pressure, which may harm retinas; Reuters reports.

Actually, last year researchers determined plant nutrients lutein and zeaxanthin, found in foods like spinach, kale and collard greens, promote eye health and prevent cataracts, while eating red meat 10 times week increases the likelihood of age-related macular degeneration by 47%.

In related news, a recent study showed vegetable-based diabetes offer superior diabetes control and omega-3 fatty acids, like those contained in walnuts, reduce inflammation linked to heart disease.

Factory Workers at Risk from Formaldehyde

According to a new study in the Journal of the National Cancer Institute, factory workers exposed to high levels of formaldehyde are more likely to die from cancer. Data on 14,000 deaths among people who worked at facilities manufacturing formaldehyde revealed a 37% higher risk of death from blood and lymphatic cancers. Many preservatives are made with formaldehyde and have been implicated in the unusual rate of leukemia deaths in pathologists; via The New York Times.

In February, researchers discovered female employees working around organic solvents containing formaldehyde had a 30% greater risk of developing non-Hodgkin's lymphoma. And pesticides, like those used on farms and for hobby-gardening, may heighten the risk of Parkinson’s disease.

Now, you got to be careful around chemicals, especially kids. Dr. Fuhrman insists it’s the parents’ responsibility to maintain a chemical-free environment for their children.

Eating to Live on the Outside: Vegetarian House

Good morning kiddies! It’s Saturday, I can finally unchain myself from the blogs, but first. Its time for Eating to Live on the Outside and this weekend I’m “off” to Vegetarian House in San Jose, California. It’s certainly got an encouraging name.

Now, at first glance the menu looks pretty good. However, I do see some stir-fried and sautéed stuff, which can be iffy, but good thing there’s a ton of veggies too. So then, here’s a quick list of food that caught my eye:

Steamin’ Greens with Rice

  • Steamed green beans, broccoli, cauliflower, red bell pepper and tofu in a light lemon sauce, served with rice; skip the rice and you’ve got a real winner.


  • Chickpeas, sesame tahini, spices and pita bread; you might pass on the pita, but I’m okay with it.

Mu Shu Rolls

  • Steamed mixed vegetables, soy protein, rice paper and spicy bean sauce; not too bad.

Heavenly Salad

  • Shredded cabbage, tofu, fresh herbs, soy protein, vinaigrette and peanuts; sounds good, but dressing on the side.

Greek Salad

  • Romaine lettuce, vegan feta cheese, tomato, cucumber, olives and Greek olive oil dressing; same deal with the dressing and I’ll pass on the fake cheese.

Baby Spinach Salad

  • Cranberries, baby spinach, corn, toasted almonds, sesame seeds and light vinaigrette; dressing on the side.

Autumn Salad

  • Mixed spring salad, Romaine lettuce, tomato, cucumber, carrot, soy protein and house dressing; again with the salad dressing.

Split Pea & Barley Soup

  • Barley, carrot, split pea and celery; provided it’s not salty, I like it.

Steamin’ Greens

  • Steamed greens, broccoli, cauliflower, red bell peppers, carrot, pine nuts, tofu and light lemon sauce; sounds cool.

Simple Green

  • Steamed green beans, pine nuts and light lemon sauce; very simple, very good.

Steamed Collard Greens

  • Fresh steamed collard greens with mushroom sauce and carrot; no problems here.

Healthy Brown Rice

  • Roasted pine nuts, sesame seeds, nori, vegetables, cucumber, brown rice and tangy sauce; not a bad choice either.

Vegetarian House has a lot to offer, with not a lot of problems. Sure, there’s a bunch of stir-fried stuff, but as you can see, you’ve got of other options. Now, if I had to pick something. I’m going with the Baby Spinach Salad or the Steamin’ Greens.

Folic Acid Pills Reduce Risk of Preterm Birth?

New findings in the journal PLoS Medicine claim moms who take folic acid supplements for one year prior to getting pregnant are 50% less likely to have a premature baby. Experts analyzed self-reporting of folate supplementation by 38,033 mothers and found premature delivery rates were cut up 70%. The drop was most profound for resulting in cerebral palsy, mental retardation, chronic lung disease and blindness. Here are Dr. Fuhrman’s thoughts on the study:

The need for folate is reflective of the inadequacy of the Americans dietary practices. The medical profession and everyone else it seems translate all these findings into the need to take a pill, instead of the lack of green vegetables in the diet.

Taking a pill is permission to eat the same crummy diet that causes child to get cancer, as well as moms. If instead, we stated the truth that a low-folate diet is dangerous and you must eat your greens every day. Then we would really see childhood cancers plummet.

Vitamin D for Cancer Protection, Strong Bones and More!

Vitamin D is more effective than calcium for protecting and building bone, plus it powerfully protects against cancer. Too much calcium can actually interfere with the conversion of vitamin D into its biologically active form, but some extra calcium taken with the Vitamin D has been shown in studies to aid bone health. The main issue is that most people still take too much calcium and do not have adequate levels of vitamin D in their tissues and this places them at a dramatic increased risk of osteoporosis and other diseases. A multivitamin containing the RDA for D is simply not sufficient to bring blood levels up to the ideal range, especially as we age.

My recommended dosage of Vitamin D varies based on individual need, but my supplement Osteo-Sun is designed so most people will be in the ideal range from the intake of 3 per day, in addition to one's multivitamin. Some may require more and some may not need as much as 3, however, the amount that is right for you can best be determined by a blood test screening for vitamin D 25 hydroxy. Most people, over 80 percent, taking a typical multivitamin that contains 400 IUs of vitamin D are still deficient when tested.

Vegetable Diets Better for Diabetes

Appearing in the journal Nutrition Reviews, new findings suggest vegetarian and vegan diets offer significant benefits for diabetes control, more so than non-vegetarian. Clinical trials show individuals with type-2 diabetes on low-fat vegan diets had improved glycemic control, compared to conventional diets. Weight-loss is part of the explanation why, but reduced consumption of saturated fat and increased intake of fiber and plant nutrients offer additional advantages; Unbound Medline reports.

Plant foods, like green veggies, garlic and nuts, are potent diabetes-fighters, helping to keep glucose levels within normal range and eventually allowing people to kick their diabetes for good, unlike taking insulin, which can actually make things worse!

And last month, a report claimed Hispanic teenagers who started eating more fruits and vegetables and less sugar, lowered their risk of type-2 diabetes.

Canadians Aren't Getting Enough Exercise

I guess more Canadians should take up hockey, because a new study in International Journal of Behavioral Nutrition and Physical Activity reveals 56% of participants, 884 adults, ages 18 to 60, living in cities, suburbs and rural areas are mostly inactive. People with less education and lower income get even less exercise, compared to people with more education and higher family income; ScienceDaily investigates.

Constant Daylight Leads to Insomnia, Suicide

New research in the journal BMC Psychiatry claims constant sunlight may cause sleep disturbances, leading to insomnia and ultimately raising suicide risk. For the study, scientists analyzed suicides in Greenland between 1968 and 2002, finding a cluster of suicides during summer months when the days are longer. Experts speculate days of constant sunlight may cause an imbalance of brain chemicals linked to mood and when paired with lack of sleep, could be deadly; Reuters investigates.

I’d have to put tinfoil on the windows! Dr. Fuhrman told me it’s about balance. Sunlight is necessary, our bodies convert the sun’s ultraviolet rays into vitamin D, which improves bone health, but sleep is important too. When we sleep our body removes brain waste and this allows for normal function of the nervous and endocrine systems.

In related news, expectant mothers getting enough sun are more likely to have children with stronger bones and sunlight helps older people avoid depression.

Vegetables Boost Cancer Risk in Smokers?

Time for a crazy report! New findings in the American Journal for Clinical Nutrition, claim smokers my increase their chances of developing colon cancer by eating fruits and vegetables. For the study, 500,000 people in 10 European countries were surveyed on their eating and smoking habits over 8.5 years and data suggests normally healthful substances in fruit and vegetables may enhance carcinogenic potential of tobacco smoke. However, in nonsmokers high intake of fruits and vegetables reduced risk; the AFP reports.

Listen, smoking is a bad idea. Here are a few reasons why. Reports have shown parents who smoke risk harming their kids’ hearts, secondhand smoke leads to allergies and can also increase risk of head and neck cancer. As for veggies, they are potent cancer-fighters.

In related news, after Pueblo, Colorado passed a municipal law banning smoking from work environments and public places the rate of heart attacks dropped 40%.

Q & A: Being a Fruitarian is Not the Most Healthy

Fruit is great. Foods like blueberries and pomegranates are known cancer-fighters and help prevent cardiovascular disease, but should you only eat fruit and nothing else? Here’s a brief discussion from Dr. Fuhrman’s member center about fruitarianism and longevity:

Question: I have been exposed to the ideas fruitarians and raw foodies. I always figured that if I had enough self-discipline to practice these dietary philosophies. I would experience superior longevity, but a while back I learned popular fruitarian advocate T.C. Fry died at age 70. What gives?! If these dietary practices reap nothing in longevity beyond age 75, what hope is there for someone who doesn’t have a family history of longevity and is by no means as dedicated as prominent fruitarians and raw foodists?

Dr. Fuhrman: Being a fruitarian diet is not most healthful! I have seen lots of fruitarian, raw foodists in poor health, including one who died in his forties because he refused to take an antibiotic for his severe pneumonia. T.C. Fry died of severe Vitamin B12 deficiency, with resultant hyper-homocystiene causing vascular disease. I saw his hospital records before he died. He taught people they did not need to take B12. There are no guarantees, in life, but fruitarianism is not the answer.

Charlotte Kicks Diabetes and Heart Disease

Summer is right around the corner. Perfect time to slim down and look great in your swimsuit.  Even singer Alanis Morissette lost the weight and now looks hot and sexy. And check out Charlotte, today’s she’s thin and healthy:

About a year and a half later I am off all my diabetic and heart medications. I have had no further heart problems and my diabetes is gone. My fasting blood sugar averages 79 without treatment. Since July 29, 2003 until now my total cholesterol has dropped from 219 to 130, my triglycerides are down from 174 to 73 and my LDL cholesterol has lowered from 149 to 70.

My current weight is around 130, slightly less than half my maximum. Since I wear a larger size on the bottom than on the top, I give it with two numbers. I have gone from a plus-size 24W/26W to a misses 8/10, which is a smaller size than I have ever worn in my adult life. How Healthy is Artie Lange's Poor Liver...

I’m a huge Howard Stern fan and I love sidekick Artie Lange. He’s hilarious, but very unhealthy. Artie’s a recovering drug addict and heavy drinker. He’s obese, smokes and loves cupcakes and fast food. Now, Artie knows he’s a mess and is trying to get better, but for some reason he is always worried about his liver, it’s a running joke, but I was curious. So, I asked Dr. Fuhrman what liver health might mean for somebody with Artie’s past:

The leading cause of death for obese people is heart disease, not liver failure. But, the problem is they can suffer tremendously with heart failure, circulatory impairment, swollen legs, infections and pain before they die.

Abnormalities on a "liver function" blood test occur because dying and injured liver cells give off enzymes as they die into the blood stream. Fortunately the liver is a forgiving organ and can regenerate and heal itself before something like cirrhosis sets in.

Nevertheless, if your habits are so poor to injure your liver you have most likely also damaged other organs.

Weak Hip Muscles May Hurt Runners' Legs

Printed in the journal Sports Health, a new study suggests weaker hip muscles could contribute to overuse injuries, such as knee pain, shin splints, tendonitis and sore feet, in runners. Experts estimate 70% of runners sustain an overuse injury each year, with half of those injuries occurring in the knee. If hip abductors, i.e. muscles at the outer hip, are weak or easily fatigued it can cause pain under the kneecap, researchers believe strengthening hip muscles could prevent these types of injuries in runners; via Reuters.

But don’t give on your running just yet! Impact exercise like running has been shown to develop stronger bones and muscles, even better than weightlifters. Now, in Dr. Fuhrman’s DVD Osteoporosis Protection for Life he demonstrates some exercises that help strengthen your muscles and bones.

In August, a report revealed middle-aged runners were 50% less likely to die than people who did not run. Runners also had a lower risk of heart disease and cancer.

Eating to Live on the Outside: End of the Line Café

Holy Saturday Batman! And thank goodness for the weekend. I have been working my tail off. Anyway, time for Eating to Live on the Outside. This week I’m taking a “trip” to Florida, to grab a snack at End of Line Café and let’s just say. It’s iffy at best.

The main problem is all the fake vegan meats and cheeses. That stuff is basically junk food. So it’s hard to rave about End of the Line, but I’m a trooper. Here’s a preliminary list of things I might talk myself into ordering:

Chef Salad

  • Green leaf lettuce, Roma tomatoes, red onions, croutons, mozzarella, cheddar, tempeh, tofu bacon capers, peperoncini peppers and house made vegan dill ranch dressing; I’m alright with the croutons, but I’d ditch the faux cheese, capers, tempeh and get the dressing on the side.

Grilled Tofu & Hummus Pita

  • Marinated grilled tofu, hummus, pita, lettuce, tomato grilled onions and tahini sauce; not too bad, I’m not worried about the bread.

Taco Salad

  • Flour taco bowl, spicy veggie taco meat, black beans, salsa, red onions, lettuce, black olives, sour cream and cheddar; oh boy, I’d nix the fake meat, sour cream and cheddar.

Mushroom Steaks Meal

  • Pumpkin soup, mushroom steaks, caramelized mashed potatoes, Béarnaise sauce, spring salad with parmesan dressing, house made garlic bread, broccoli Au Gratin and blueberry cobbler; well, provided the soup isn’t salty its okay, dressing on the side, no sauce, I’d ditch the Au Gratin on the broccoli and I’m cool with the cobbler.

Eggplant Zucchini and Grilled Tofu Napoleon

  • Tomato-dill bisque, eggplant, zucchini and grilled tofu napoleon, shiraz-beet reduction sauce over pecan, raisin and shitake pilaf, grilled Corn with smoked paprika butter, collard greens, spring salad and green tea cake; no smoked butter concoction for me.

Tofu & Red Pepper Fajitas

  • Tortilla soup, tofu, red pepper fajitas, refried beans, avocado, Pico de Gallo, sour cream, lettuce, cheese spring salad with mango salsa dressing El Paso beans and rice; okay, I’m dropping the sour cream and cheese on the salad and I’ll deal with the refried beans.

Mousakka Meal

  • Lentil vegetable soup, Mousakka, rice pilaf stuffed acorn squash, Greek salad with tofu, Feta, pita with roasted red pepper hummus and almond cake with fresh local blackberries; I’d pass on the Feta.

Wow! Despite being a vegan joint, which usually is a good sign, End of the Line is pretty rough, too many faux meats and cheese and other vegan junk food. If I had to pick something, I’d go with the most basic thing, the Chef Salad.

Coffee in Pregnancy Increases Cleft Lip Risk

Cleft lip is a fissure causing a gap in the top lip and findings of a new study in American Journal of Epidemiology reveal drinking coffee during pregnancy slightly ups the risk of cleft lip or harelip. Experts compared data on 573 women who had babies with cleft lip and 763 women whose kids did not. Women drinking a daily cup of coffee during the first 3 months of pregnancy were 1.39 times more likely to have a baby with harelip and the likelihood increased to 1.59 for women who drank 3 or more cups of coffee a day; Reuters reports.

Sometimes I have a cup of coffee. Luckily I can’t get pregnant. Coffee, i.e. caffeine, isn’t healthy. Drinking coffee has been shown to double arthritis risk, raise blood pressure and disturb heart function. Caffeine is a toxin, which can cause headaches, anxiety and detox symptoms similar to coming off drugs.

Recently, a study showed women drinking more than 3 cups of coffee a day had 17% smaller breasts. Oh, and instant coffee can make you hallucinate. Far out man.

Vitamin D Too Low in Moms and Newborns -- UPDATE --

Expectant mothers need more sun. Presented at the Pediatric Academic Societies annual meeting, scientists recommend women of childbearing age spend more time in the sun in order to get sufficient vitamin D. Researchers found over one-third of mothers and 58% of their infants have vitamin D deficiency at birth. Blood samples from 433 women and 376 newborns, within 72 hours of birth, revealed low vitamin D was present in 36% of mothers, with deficiency was considered severe in roughly two-thirds of cases; Reuters reports.

The sun is important to our health. We convert ultraviolet rays into vitamin D, which tells our bodies to absorb calcium and phosphorus. Other studies show mom’s getting enough sun exposure strengths their children’s bones. Now, Dr. Fuhrman sells a vitamin D supplement, in vegan and non-vegan formulations.

In related news, insufficient vitamin D has been linked sudden cardiac death, such as heart failure and cardiac muscle performance, and rickets in young children.

Kentucky is the Saddest State

Printed in the upcoming issue of the American Journal of Preventive Medicine, researchers claim Kentucky residents have the highest level of distress and prolonged mental health problems, but not surprisingly, people living in Hawaii were the least likely to experience mental health issues. Experts defined mental distress as 14 or more days of emotional discomfort and 14.4% of Kentuckians clocked in with difficulties. For the study, the Centers for Disease Control and Prevention surveyed 2.4 million adults; via National Geographic.

Not good news for Kentucky. Dr. Fuhrman insists a satisfying emotional environment is an important part of good health. For example, a stressful job can cause angina and heart-related chest pain, and eating comfort food, i.e. bad stuff, for emotional fulfillment may lead to weight gain and obesity, both aren’t doing your mood or health any favors.

In November, the CDC named Burlington, Vermont the healthiest city in the United States, with 95% of citizens in good or great health. So take your pick, Vermont or Hawaii.

Omega-3 Fatty Acids Lower Inflammation

New findings in the European Journal of Clinical Nutrition show high blood levels of omega-3 fatty acids result in less inflammation associated with cardiovascular disease. For the study, experts divided 124 adults into groups based on the amount of C-reactive protein, a marker for inflammation linked to heart disease, in their blood and found an inverse relationship between fatty acids and C-reactive protein, greater levels of omega-3 fatty acids like DHA and EPA helped reduce the risk of inflammation; Nutra Ingredients reports.

Walnuts a great source of omega-3 fatty acids. I eat some everyday. Actually, omega-3’s also help prevent stroke, lower the incidence of prostate cancer and reduce risk of type-1 diabetes in children. Dr. Fuhrman sells his own fatty acid supplement, DHA Purity.

In February, a study showed omega-3 fatty acids help protect the liver from damage caused by obesity, reducing inflammation and improving insulin tolerance.

Obese Kids Get More Allergies

Appearing in the Journal of Allergy and Clinical Immunology, scientists believe a positive association exists between obesity and allergies. Research involving 4,000 children, ages 2 to 19, revealed antibodies for specific allergens, such as indoor, outdoor and food allergens, were higher in overweight or obese children. Data revealed obese kids were 26% more likely to have some kind of allergy and the rate for food allergies was 59% higher among obese children; Reuters investigates.

The CDC now claims 3 million kids have food allergies. According to Dr. Fuhrman breastfeeding is major-preventer of allergies. Antibodies derived from mother’s milk help maximize immune system function. Now, allergies are bad enough, but overweight kids, even as young as 3 years old, can start showing signs of heart disease, for real!

In related news, a study of 3,000 children found kids spending two or more hours watching television per day, were twice as likely to develop asthma as kids watching less.

Salt Storage Leads to High Blood Pressure

A new study in the journal Nature Medicine claims consuming too much sodium leads to an increased accumulation of salt in the interstitium of the skin, i.e. the area between cells. This process is regulated in our bodies by special white blood cells known as macrophages and within these macrophages scientists found a gene regulator called TonEBP. TonEBP turns on another gene that controls the production of lymphatic blood vessels. In the study, experts observed a high-salt diet causes lymphatic vessels to increase, leading to hypertension in animals; via EurekAlert!

In March, research showed consuming salt decreases levels of an enzyme called nitric oxide synthase (NOS), which signals nearby muscles to relax, improving blood flow and lowering blood pressure. This is similar to another study that showed switching to a low-salt diet helps blood vessels relax.

In related news, a previous report determined regardless of genetics or gender, people who excreted more salt had higher blood pressure.

Q & A: Balancing Your Omega Fats

We all know fat can be bad, like trans-fat. Trans-fat raises LDL or bad cholesterol and also lowers HDL or good cholesterol, but still, many fats are very healthy, like omega fats, found in stuff like avocados. Here’s a quick Q & A about balancing omega fats from Dr. Fuhrman’s member center:

Question: My dim understanding is that our diet and consequently our blood and our tissues should contain some ideal ratio of omega-6 fats and omega-3 fats, such as a 1 to 1 or 1 to 2 ratio of ecicosapentanoic acid (EPA) to arachidonic acid (AA). So the fact that a blood test would detect some AA is not necessarily bad, so long as the test detects a roughly equal amount of EPA, is this correct?

Dr. Fuhrman: Yes, you need some AA. Only in excess is it a problem. Some of fats are more pro-inflammatory, but it is a question of balance. When you eat a diet rich in greens with about half seeds and nuts in a 1 to 1 ratio, with some supplemental DHA if you do not eat fish regularly, then you get the right balance of fatty acids, obsessing to get a 1 to 1 or even a 2 to 1 ratio results in food paranoia.

News Coverage Slows Trans-Fat Purchases

Trans-fat’s been quiet lately, but for good reason. New findings in the American Journal of Preventive Medicine claim negative news reports on the dangers of trans-fat, such as heart risks, influences people to avoid foods with trans-fat. Trans-fat raises LDL or “bad cholesterol” and also lowers HDL or “good cholesterol” and is commonly found in junk foods like cookies, crackers and French fries. Researchers found shoppers in Los Angeles, California were more careful about their purchases after media coverage on artery-clogging trans-fats, but only for a short time; Reuters reports.

Not to long ago there was a great debate about banning trans-fat. Many health experts want trans-fat gone, but other say trans-fat is a market issue and consumers should decide whether or not they want to buy it. But trans-fat is unhealthy, linked to both colon cancer and breast cancer.

Trans-fat has gotten the shaft nationwide, from New York to California, even retailers and restaurants like Wal-Mart and Kentucky Fried Chicken have given trans-fat the heave-ho.

Eating to Live on the Outside: Roots

Happy Saturday! I’m hungry. Let’s grab something to eat. Today we’re off to California and stuffing our faces at Roots, a vegan restaurant serving kind food for kind folks. How cute.

Roots really measures up, a totally workable place for Eating to Live on the Outside, tons of vegetables and other cool stuff. So, here’s a quick list of food I might try out:

Farmers Market Salad

  • Mixed greens, seasonal veggies, shallot Dijon vinaigrette and slice of bread; I’m okay with the bread, but dressing on the side.

Taco Salad

  • Romaine lettuce, black beans, carrots, avocado, salsa, jicama, blue corn chips, pepitas and lemon garlic dressing; I can handle the chips and same deal with the dressing.

Avo Sandwich

  • Cucumber, avocado, red onion, sundried tomato, Romaine lettuce, sunflower sprouts, vinaigrette and mustard on wholegrain bread; lots of great stuff here!

Cilantro Hummus Wrap

  • Carrot, cilantro, hummus, sundried tomato, red onion, zataar and lemon balsamic vinaigrette and whole wheat wrap; I really like sundried tomatoes.


  • Black beans, salsa, avocado, pepitas and lemon garlic dressing and whole wheat wrap; no complaints here.

Thai Peanut Avo Wrap

  • Jicama, avocado, cucumber, sprouts, carrot, Romaine lettuce, cilantro, mint, green onion and peanut sauce and whole wheat wrap; I’ll pretty much eat anything with avocado.

Porto Sandwich

  • Grilled Portobello mushroom, sundried tomato, basil, Romaine lettuce and lemon balsamic vinaigrette on ciabatta bread; mushrooms are cool and I’m fine with the bread.

H.A.P. Sandwich

  • Cilantro hummus, artichoke hearts, Portobello mushroom, sundried tomato, basil, red onion, Romaine lettuce and lemon balsamic vinaigrette on ciabatta; I dig it.

Raw Wrap Avocado

  • Sunflower sprouts, avocado, beets, seasonal local veggies, collard greens and raw lemon garlic dressing; hard to do better than beets and collard greens.

Certainly plenty of good stuff to choose from, but if I REALLY had to pick something. I’d order the Taco Salad or the Raw Wrap Avocado, although I am leaning towards the wrap.

Here’s the sad part. Roots appears to be looking for a new location. So let’s hope they find one soon. But for now, check out Roots’ menu and let me know what you’d go for. Peace.

Cancer in Minorities to Skyrocket in 20 Years...

According to a new study in the Journal of Clinical Oncology cancer cases among Hispanics and African Americans could reach 157 million by 2030, up from 46 million in 1980. For the study, scientists analyzed information from a national health database and projected Hispanics will experience the highest increase in cancer incidence with 142%. Now, these figures may be higher than what will actually happen, but researchers warn the trends are very clear and strong; HealthDay News investigates.

Actually, many experts believe these trends can be reversed with better diet, i.e. more fruits and vegetables, and more exercise. Plant foods are potent cancer fighters. Just yesterday pomegranates were shown to improve prostate cancer recovery. Also, switching to a diet including more fiber and less sugar can stave off diabetes in Latinos.

In related news, recent studies show foods like green vegetables and nuts help prevent ovarian cancer, while stuff like charred meat raises the risk of pancreatic cancer.

Help Change the Direction of Health Care


Nutritional science has made dramatic advances in recent years. We are at a point in history where we understand that the majority of diseases plaguing Americans are preventable. We have an unprecedented opportunity in human history to live healthier and longer than ever before. Nevertheless, most Americans have been brought up to believe drugs are the solution to their health care issues and billions of dollars get donated though non-profits to fuel drug development. This is the main reason we have a health care crisis today; the lack of funding for research in nutrition.

With the help of the National Health Association, I have set up the Nutritional Research Project, a non-profit foundation for the purpose of funding medical research utilizing my high-nutrient-diet therapeutically to reverse diseases. This information is also needed to promote the awareness of dietary-caused disease, the major cause of chronic illnesses and premature death in modern countries. As a nation it is possible for us to win the war against heart disease, strokes, dementia, diabetes, and cancers by making a few simple but profound diet and lifestyle changes.

My 20 years of patient experience with more than 10,000 patients and thousands of case histories demonstrate nutritional excellence is not merely preventative, but more effective than medications for most diseases. However, our population and the medical profession will never incorporate this lifesaving knowledge into our nation’s health care system until it is shown to be effective in medical journal published clinical studies.

We are in desperate need of funding to support such medical studies demonstrating the effectiveness of this dietary-based approach to disease and to bring the results of the research to the public for implementation.

I sincerely appreciate any money that can be donated to help this important cause. The billions of dollars that are typically donated to medical causes go exclusively to drug research and that is what essentially has caused the health care crisis in the modern world, and millions of needless deaths; an over-reliance on drugs, while people destroy their health with a disease-causing diet-style.
